HOW IT’S MADE AND HOW IT WORKS:

  1. Stainless steel cylindrical triple wall container ENTIRELY WELDED (NOT RIVETED) with insulation and water recirculation cavity;
  2. Agitator with continuous/alternating selector and “drop in” type removable triple blade;
  3. Special agitator for curd agitation (optional);
  4. Curd cutting system with lyre (optional); 
  5. Double probe (product-cavity) – optional;
  6. Heating: bainmarie system with HIGH EFFICIENCE methane or LPG gas burner with  electronic ignition system;
  7. r electronic ignition (TCG series);
  8. Cooling with water to loose or ice water with electro-valve;
  9. Thermal cycles managing with MULTIPROGRAM control panel with manual or automatic mode.

Standard capacities:  200l - 300l - 500l (on request other capacities are available).
